Tomato and Pineapple Salsa

Being real, I have watched so much TV recently it’s insane – at the moment there are loads of amazing films out, as well as really good TV shows (and of course, the never-ending temptation of Netflix), so I thought I’d make myself something tasty to enjoy while I indulge my awful procrastination.

Salsa is the easiest thing in the world to make, and it’s always so nice to cook something fresh and homemade when your friends come over, so this recipe is a great one to have on hand if you’re entertaining – or even daring to try a barbecue if the weather stays nice!

I’ve added pineapple for a bit of sweetness in this salsa, but as long as there’s the basic tomatoes, onions andΒ jalapeΓ±os you can add anything you’d like to this recipe – mango, peppers, olive oil… It’s all delicious, healthy stuff and tastes really good with tortilla chips or pitta bread.

Let me know in the comments below how you’ve jazzed up your salsa, I’m always on the look-out for good comfort food recipes!

Tomato and Pineapple Salsa

Two large tomatoes

Half a red bell pepper

Half a small onion

One clove of garlic

One jalapeΓ±o (or half, or a quarter, depending on your spice tolerance)

Around 50g of pineapple

One small handful of fresh coriander

One lime

Tortilla crisps to serve

  1. It’s easy! Chop all of the ingredients up (except for the lime and the crisps) in a bowl, then squeeze the lime over and mix it all together.
  2. Serve with tortilla chips.

Makes one medium-sized bowl
