I thought I’d do something a little different for this blog post, and do a round-up of five brilliant, easy breakfast ideas to get you through the week.
I often wake up in the morning and don’t know what I feel like eating, or I go for the wrong thing and end up hungry a few hours later, so I thought it would be a good idea to have a few staple recipes that I could always go for on a terrible Monday/hangover morning (this morning I attempted to combat my hangover by eating veggie jelly sweets for breakfast. Bad move.)
These are just ideas, and can be tweaked about by adding stuff in or taking stuff away, feel free to do your own thing with them! Hopefully you’ll find something you like here and you won’t be stuck for your morning meal again.
One: Avocado toast
There’s a reason avocados have seen a boom in popularity recently, and that’s because they’re delicious and really good for you! To make this recipe simply smush half a ripe avocado onto one slice of buttered toast – you can add stuff to jazz it up, like paprika or lime.
Two: French toast
Traditionally French toast is made with egg, and I do sometimes cook it that way (dip bread into beaten egg and fry it on both sides), but it can be made vegan easily. Simply switch the egg for almond milk and/or an egg replacer.
Serve with loads of fresh fruit and agave syrup.
Porridge is always a staple breakfast recipe for me, and it’s so versatile.
Outside of the standard recipe (50g porridge oats to 250ml of dairy-free milk) it can be jazzed up in loads of different ways, with fruit, chocolate or more.
Smoothies are the best way to wake up if you’re hungover or need a bit of a pick-me-up; the fibre makes it so much better for you than juice, and the sugar will get you going and ready for the day.
The example picture is a bought one obviously, but you can make your own by blending up the following:
Half an apple
Half a banana
One peeled kiwi
150ml of soy milk
Giant handful of baby spinach
Around 100g of pineapple
Five: Tofu scrambled “egg”
Yes, you can make a sort of scrambled “egg” with tofu, and it tastes really nice! Here’s my recipe for the breakfast, which is not only healthy, but also warming and delicious.
Half a packet of firm silken tofu (175g)
Half an onion
One clove of garlic
Half a courgette
Half a pepper
Half a teaspoon each of cayenne pepper and turmeric
- Fry the onions and garlic in a little oil until golden. Add the courgettes and peppers.
- Cut the tofu into little cubes, then add to the pan, stirring so that it scrambles into the veggies. Add the spices and stir so the whole thing turns yellowey.
