In England, we have a government guideline that says we should aim to eat five portions of fruit and veg a day if we want to be healthy. I don’t know about you, but even as a vegetarian, I can find that really hard. Working in an office all day I’m finding that I’m snacking unhealthily more often… You have toast in the morning, a peanut butter sandwich for lunch, chocolate snacks, and before you know it, it’s dinner time and you haven’t had a single vegetable!
Now I’m really not the kind of person who will advocate just eating salads; you guys know as well as anyone, I would never sacrifice my treats, and I would never ever promote dieting. But it’s very important to have a healthy lifestyle, and eating lots of fruit and veggies is a big part of that.
Anyway, because I’ve been struggling a bit to get all the veggies I need lately, I thought I’d invent a dish that gets every single one of your five-a-day in one evening meal. If you’re having a treat day where you’ve been eating not so well, have this in the evening and then you can be sure you’ve had all your goodness for that day :)
Eat all this up, and then you’ve properly earned all the ice-cream you’ll have for pudding! I hope you all like it :)

75g of rice
One tablespoon of olive oil
Half a red onion
One clove of garlic
Half a courgette
Half a red pepper
Three tablespoons of sweetcorn
Half a tin of chopped tomatoes
Any spices you want to use (I used salt, pepper and paprika)
- Cook the rice in boiling water for 10 minutes until cooked.
- Meanwhile, chop all the vegetables. Heat the oil and fry the onions and garlic first until tender, then add all of the other veggies until golden brown.
- When the rice is done, add it into the vegetable mix and stir. Add in the tomatoes and spices and stir until it’s all mixed together.
