Five-A-Day Rice

In England, we have a government guideline that says we should aim to eat five portions of fruit and veg a day if we want to be healthy. I don’t know about you, but even as a vegetarian, I can find that really hard. Working in an office all day I’m finding that I’m snacking unhealthily more often… You have toast in the morning, a peanut butter sandwich for lunch, chocolate snacks, and before you know it, it’s dinner time and you haven’t had a single vegetable!

Now I’m really not the kind of person who will advocate just eating salads; you guys know as well as anyone, I would never sacrifice my treats, and I would never ever promote dieting. But it’s very important to have a healthy lifestyle, and eating lots of fruit and veggies is a big part of that.

Anyway, because I’ve been struggling a bit to get all the veggies I need lately, I thought I’d invent a dish that gets every single one of your five-a-day in one evening meal. If you’re having a treat day where you’ve been eating not so well, have this in the evening and then you can be sure you’ve had all your goodness for that day :)

Eat all this up, and then you’ve properly earned all the ice-cream you’ll have for pudding! I hope you all like it :)

Five-a-day Rice

Five-a-day Rice

Ingredients

75g of rice

One tablespoon of olive oil

Half a red onion

One clove of garlic

Half a courgette

Half a red pepper

Three tablespoons of sweetcorn

Half a tin of chopped tomatoes

Any spices you want to use (I used salt, pepper and paprika)

Method

  1. Cook the rice in boiling water for 10 minutes until cooked.
  2. Meanwhile, chop all the vegetables. Heat the oil and fry the onions and garlic first until tender, then add all of the other veggies until golden brown.
  3. When the rice is done, add it into the vegetable mix and stir. Add in the tomatoes and spices and stir until it’s all mixed together.

Serves one
