Candied Almonds

Making one of my favourites today, candied almonds! They’re a lovely snack and taste so amazing; I’ve actually wanted to make them since I got something similar in a Graze box (in case you haven’t heard of them they deliver yummy snacks to your house or office) so I thought I’d give them a try today, and they actually taste pretty similar to the proper stuff :)

As you know I’ve been very busy recently having just started an intense journalism training course, so I’ve been trying to experiment a little more with very quick desserts and snacks. This one takes barely any time, and it needs hardly any looking after – I was manically running around the house trying to sort things out whilst this was merrily cooking away!

Thankfully I’m nice and curled up in bed now, I owe all of my calm feelings now to those “chill out for meditation” playlists on YouTube. Let’s see if my zen mood will last on the tube to work tomorrow… A man sneezed on me on the Victoria line this morning and I thought I was going to sock him in the nose!

Candied Almonds

Candied Almonds

Ingredients

One mugful of almonds

Half a mugful of caster sugar

Quarter of a mugful of brown sugar

One tablespoon of flavourless oil (vegetable oil)

One teaspoon of cinnamon

Method

  1. Preheat the oven to 200 degrees Celsius.
  2. Mix the sugar together, and coat the almonds in all of the other ingredients.
  3. Whack them on a baking tray and roast in the oven for 30 minutes, stirring at the halfway point.

Makes a big bowlful

  1. They sound simple and tasty! I made some Buttered Rum Mixed Nuts for the holidays and they were pretty popular, but these sound like they would be good year round.
