I thought for my first post of the year I would do something healthy for all of you reading that might be sticking to your new year’s resolutions! I’ve started some of my resolutions already; I want to donate blood three times this year, and I donated a few days ago, so there’s the ball rolling on that! If you live in the UK and fancy giving blood just go to the website and sign up. I try not to make new years plans to get healthy or stop swearing as it just disheartens me when I inevitably fail, so lots of my plans are positive goals such as to go travelling, or make progress with my journalism career, so watch this space! This recipe is just a really simple one that can be done after work if you have barely any time. I’ve been starting my PMA diploma at the Press Association for the last three day, and I feel like I have no time in the evening to cook healthy food, so this is a snapshot of the sort of thing I eat when I’m pressed for time. I hope you like it!
One flour tortilla, preferably wholemeal if you’re trying to be a health machine
One tablespoon of tomato puree
Half a teaspoon of dried basil
Any toppings you fancy, I chose kidney beans for protein, as well as peppers and sweetcorn
A sprinkling of cheese if you fancy it
- Preheat the oven to 180 degrees Celsius. Smooth the tomato puree onto the tortilla and evenly sprinkle the chosen toppings on top. Drizzle a little olive oil over the pizza along with the basil.
- Cook the pizza for about 10 minutes, making sure it doesn’t burn around the edges like mine did!
