Caramel Banana Porridge

It’s Autumn, which means porridge is back! I used to have porridge every single day for breakfast, but summer in London this year was far too hot to have it in the mornings, so this is the first day since last winter I’ve made it again! I thought what better way of marking this occasion than making literally the most indulgent, unhealthy thing I could possibly think of, so here’s caramel and banana, probably the most delicious thing I’ve eaten in months; sweet, warm and comforting :)

I began a sort of porridge campaign last year if anyone can remember, and now winter’s nearly around the corner I fancy making some more recipes for comfort breakfasts. If anyone thinks this is a good idea or has any ideas they’d like me to try, let me know in the comments below! These are some of my favourites I’ve made so far: Carrot Cake, Apple Pie, Banana Bread, and Ginger Bread.

Hope you like it as much as I did!

Caramel Porridge

Caramel Porridge

50g of porridge oats

250ml of soy or almond milk

Half a teaspoon of cinnamon

One tablespoon of dulche de leche or caramel chips or you can make your own! Here’s a link to a recipe :)

One small banana

One tablespoon of vegan butter to fry with

  1. In one pan, put the oats, milk and cinnamon together and lightly heat for about 7 minutes until thick and creamy.
  2. Meanwhile, chop the banana into little bits and fry in the butter until gooey and caramelised.
  3. Swirl the caramel into the porridge and add the banana to the top!
