Now that I’m working, and writing in my spare time, I don’t have a huge amount of time for bigger cooking tasks such as baking cakes or macarons or things like that that take a lot of time which I used to make, which is okay, I’m having a great time being busy and doing other things, but sometimes you need a homemade cake in your life. So I was getting some inspiration looking around in books and online and I thought I’d make a microwave mug cake to satisfy my chocolatey needs in around two minutes; I used to live on these things at university! As long as you get the basic proportions correct you can pretty much add whatever ingredients you fancy; I make this a lot with blueberries instead of peanut butter, or maybe ginger, or even white chocolate pieces? It takes so little time and effort, so go crazy and experiment!
Tips for mug cakes: Try to use a big mug as they can overflow very easily and check them frequently whilst they’re cooking so they don’t overflow/explode.
Sorry for the weird looking photo by the way, I had this for an evening snack so the lighting’s not amazing, but I hope you love the recipe regardless!
One and a half tablespoons of cocoa powder
3 tablespoons of self-raising flour
Pinch of salt
One and a half tablespoons of caster sugar
3 teaspoons of apple sauce
3 tablespoons of soy milk
A few squares of dark chocolate
One tablespoon of peanut butter, and peanuts to decorate
- Mix the dry ingredients very well in a big mug, then add the wet ingredients and stir to combine.
- Bash the dark chocolate up and add to the mug.
- Microwave on high for about two minutes, checking frequently so it doesn’t overflow. Add the peanut butter to the top – when you eat it, try to get some of the peanut butter with the cake in every bite :)
