Cooking Without a Kitchen: Microwave Quesadillas

So as you’ve probably guessed by the title of this post… I currently have no kitchen. I’ve had to move back in with my mum since I’ve come back from university, and she’s just moved house so there’s a lot of building work currently going on; consequently we don’t have an oven, sink or any kitchen counters to work with, and consequently I have been eating a lot of crappy food. I decided that as well as needing an excuse to blog, I also needed a decent meal rather than the constant stream of pizza and microwave mug cakes, so after racking my brain thinking, I remembered the awesome District Taco quesadillas that my best friend introduced me to whilst I was in America (why, why, why isn’t Mexican food a big thing in the UK?!) and thought they would probably be edible with just a microwave to play with. They were. Hot damn they were good, I’ve missed real food.

So that’s my experience of post-graduate life thus far, I have learnt to feed myself with no kitchen. I’ll keep you all updated on any successes I have aside from this masterpiece of culinary convenience.

If anyone has any microwave recipes they’d like to recommend to me I’d love to hear them in the comments! Our microwave broke at uni so I don’t have much experience with them and I’m fearing for my health… What are vegetables?!

Microwave Quesadilla

Microwave Quesadilla



Two tortillas

200g of pre-cooked (canned) kidney beans

Three heaped tablespoons of sweetcorn

Half a chopped red pepper

A few sliced cherry tomatoes

As many spices as you can find (I just used a sprinkle of paprika as I couldn’t find anything else)

Lots and lots of grated cheese/vegan cheese


  1. Lay one tortilla on a plate, layer the fillings on top then smother with vegan cheese and lay the other tortilla on top of that, sort of like a tortilla sandwich.
  2. Put in the microwave on full blast for about four minutes, or until the cheese has melted and everything is piping hot. Serve cut into quarters.

Serves one

  2. what vegan cheese do you use? The ones I’ve tried are not as melty as I’d like.

    I hear ya on the lack of Mexican food here. I’m from Arizona and I miss Mexican food like crazy!

  3. I know your pain! We had a lot of building works last year, it was worth it, but there was a lot of disruption! I’m going to think of some micro-recipes and come back to you, but one life saver for me was the slow cooker. I had it set up on a side table in the living room during the worst few days! You just chuck everything in it raw in the morning and its ready for tea time. Curry, stew, soup even self saucing puddings. I’m off to think of micro-recipes now…..! X
