I don’t know about you guys, but if I have something important to do I will usually aggressively procrastinate until the day before and then do it all in a manic rush… I swore I wouldn’t do that with my dissertation and I’ve actually been very good at sticking to that so far, but 8,000 words in and I’ve reached my intellectual limit. I figured chocolate would be my main cure here, which again, it actually was! I love peppermint, but if you don’t you could always make these orangey or strawberry-y instead, just switch the flavourings and colourings :)
So I’m going to get back to writing and writing and panicking and writing, but I hope you like these (very messy looking) peppermint chocolate bars, I am currently using mine as motivation to complete this crushing mountain of essays before me. Wish me luck.
250g of digestive biscuits
300g of vegan spread
50g of desiccated coconut
2 tablespoons of cocoa powder
200g of icing sugar
1 teaspoon of peppermint essence
A few drops of green food colouring
200g of dark chocolate
- Crush the biscuits in a bowl, add the coconut and cocoa powder. Melt 125g of the vegan spread, then stir it into the biscuit mixture. Press this into a greased tray, then leave in the fridge whilst you do the next step.
- Mix the icing sugar with 125g of the vegan spread, then when that’s fluffy (you may need to add a teaspoon of soy milk), add the peppermint and food dye.
- Spread the icing carefully over the biscuit layer and return it to the fridge.
- Melt the chocolate and the rest of the vegan spread together, then spread that over the icing layer. Return to the fridge until set. When completely cool cut into slices.
