I was craving sweet things the other day when I came across an awesome article on BuzzFeed about recipes with only three ingredients in; as a poor student I thought I should definitely give at least one a try, in this case Peanut Butter Cookies. I love making things that are really cheap, as it proves that you don’t have to have weird ingredients like rose syrup or spirulina powder to make yourself lovely healthy food; it’s really rewarding to eat something that you’ve cooked yourself, so it’s nice to know that I can do that even when my bank balance is hurting!
I also looked up this recipe on a number of different websites, and a few of them said that egg replacement powder works just as well as an egg in this recipe, so it’s easily veganised!
I’ve packed them all up in foil for my journey back to London tomorrow morning, car journeys are always better with a good book and lots of sugar.
270g of peanut butter
200g of caster sugar
Any add-ins you fancy – I used vanilla extract, you could also put in chocolate chips?
- Preheat the oven to 180 degrees Celsius. Line a baking tray with greaseproof paper.
- Mix all of the ingredients until smooth. Dollop teaspoons of the mixture onto the tray and bake for 10 minutes.
