Another really busy week for me! This is a recipe I found when I was looking for things to keep me really full on days that I didn’t have a great deal of time to stop – the combination of lentils and pasta in this meal is ridiculously filling without feeling heavy, so it’s perfect for fueling up for busy weeks or exercise or something like that. Also it tastes good :)
Back in London very soon, so hopefully things will calm down a bit once I’ve got a break from crazy university… And then, America! I’m going to the States to visit my best friend who’s doing a year abroad there, so hopefully I’ll be able to get a few pictures of the burgers, apple pies and enormous portion sizes (yes, I know I’m generalising a lot, but I’ve never been before so I can only guess!) As long as I catch a glimpse of the Statue of Liberty I’ll be happy!
One portion of macaroni pasta
100g of puy lentils (I used microwave ones)
Half a teaspoon each of: cayenne pepper, cumin and chives
One large tomato
Half an onion
A little oil
- Cook the pasta in boiling water for 10 minutes.
- Meanwhile, chop the onion and fry in the oil until golden.
- Put the lentils in the microwave for 2 minutes, and then mix with the spices once its heated.
- Chop the tomatoes, then layer the dish: pasta, then lentils, then tomatoes, then onions on top. Serve with salt and pepper.
