Decided life is too short not to eat chocolate for breakfast sometimes; also, I’ve realised that if I wake up and immediately do something that requires effort I will almost always have a productive day afterwards. It sort of didn’t really work today seeing as I’m still ill*, but productivity here is irrelevant as I no longer care about anything in my entire life except for these pancakes. They tasted like rainbows and happiness. They made my flu seem like a breeze (sort of). In short, they taste damn fine, and they’re vegan so there’s no excuse not to make them.
So make them, and report back about how much more awesome they made your day.
One ripe banana
150 ml of soy or almond milk
1 teaspoon of vanilla extract
One mugful of plain flour
1 teaspoon of baking powder
Half a teaspoon of cinnamon
A pinch of salt
A big handful of blueberries
A small handful of dark chocolate chips
Vegan spread for the pan
Maple or golden syrup for drizzling
- Mash the banana really well and mix it with the milk and vanilla.
- Mix the dry ingredients together well, then pour the banana mixture into the dry ingredients. Mix until just combined, then add the blueberries and chocolate chips.
- Heat the spread in the pan until really hot, then blob the mixture into the pan. Heat until bubbles form and then flip, cooking until golden both sides.
- Repeat this until the batter’s used up, then stack the pancakes and drizzle with maple syrup.
Makes about six (good for one person with a big appetite, i.e. me)
