Chocolate and Cranberry Cupcakes

I was feeling sorry for myself yesterday as I’m managed to catch some kind of flu (I may be dying) so I made myself some cupcakes in order to feel better – they worked sort of, I still feel really ill, but at least I have chocolate now to numb the pain! I made them with just plain vanilla icing as I ran out of cocoa powder after making the cakes, but feel free to make the icing chocolatey, or add more chocolate chips into the mixture, it’ll only make them better!

I hope you like them if you make them at home, they certainly made my horrible illness feel a bit better :)

Chocolate and Cranberry Cupcakes

Ingredients

For the cupcakes

100g of plain flour

100g of caster sugar

2 tablespoons of cocoa powder

Half a teaspoon of bicarbonate of soda

Pinch of salt

3 tablespoons of vegetable oil

Half a teaspoon of vanilla extract

Half a teaspoon of distilled white vinegar

125ml of water

50g of dried cranberries

For the icing

One big tablespoon of vegan spread (or butter)

Half a teaspoon of vanilla extract

Enough icing sugar to make it smooth and fluffy – I used around 200g

Method

  1. Preheat oven to 180 degrees Celsius. Line a baking tray with cupcake cases.
  2. Sieve together the flour, sugar, cocoa, bicarbonate of soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth. Add in the cranberries.
  3. Pour into the cases and bake for 25-30 minutes. Remove from oven and allow to cool.
  4. Mix together the icing ingredients until fluffy and spread over the cupcakes. Decorate with more cranberries.
