Simple Veggie Pasta

And so it begins again, I’m back to being ridiculously busy! 3rd year at uni is so much work, it’s insane. I have to read about 3 novels a week as well as coursework and dissertation and my actual paid job, and on top of that I’ve just been cast in another play, which is great! I’m playing Brian (I think my short hair may have confused the casting crew slightly) in a play called Jackets… And I have to shoot myself. Awesome.

So along with that madness, I don’t have much time to cook and blog, so I thought I’d make a really easy pasta dish that only takes about 10 minutes and it’s got loads of goodness in for when you’re crazy busy. It also tastes really good, which is a bonus.

As I’m really busy I thought it would be quite nice to push for you guys to submit your own stuff for me to put up here – I sometimes have guest posts and it’s a great way for me to get inspired about your recipes and it means that I can post more regularly as it takes less time for me to publish; I really love reading your articles and recipes so if you fancy doing a guest post just email me:

Veggie Pasta

Veggie Pasta


One portion of pasta

Half a tin of chopped tomatoes

Any veggies you fancy (I chose courgettes, sweetcorn and peppers)

A little bit of oil

Seasoning like salt, pepper and basil

Optional cheese – I added cheese after the photo so it would look better


  1. Cook the pasta in boiling water for about 10 minutes.
  2. Meanwhile, chop the vegetables and fry them lightly in a bit of oil until golden. Add the chopped tomatoes and seasoning and mix with the pasta once it’s cooked.
  3. Add cheese if you want it.

Serves one
