Sorry I haven’t posted anything savoury for quite a while, but I’ve been having an indulgent holiday! Loads of people on Facebook this week have been making posts saying “new year, new me!” and I was just like… Yeah, no. I enjoy eating food that tastes good, and as long as you eat healthy food as well and move around a bit, I really see no problem with eating a lot of chocolate and peanut butter quite often. Having said that, I did make one New Years resolution, to go travelling, and I’ve already (kind of) done that! My best friend is studying in the States this year and we’ve been talking about me visiting her for ages without actually making any proper plans, so yesterday I bit the bullet and bought plane tickets! In April I will be in Washington DC! I’m very excited, as you can tell.
Anyway, I love this recipe, and so did my mum and sister, so do make it at home, if like me you haven’t bothered to “get healthy” this New Year.
I adapted this recipe from an American website and I don’t have a good set of weighing scales at home, so I’m doing the measurements in cups today, but for all you Englishmen out there like me, just use a mug. I used a medium sized tea mug.
One and a half cups of oats
Half a cup of Rice Krispies cereal
Half a cup of peanut butter
About 4 tablespoons of maple syrup
One teaspoon of vanilla extract
100g of dark chocolate
- Mix all of the ingredients but the chocolate in a big bowl, the smoosh into a square tin and freeze for 20 minutes. I had a game of Monopoly with my sister at this point, so I froze mine for about an hour.
- Melt the chocolate and drizzle on top, then cut into bars.
