Whilst we were travelling around Europe we didn’t have access to a great variety of food, so most nights we bought stuff from a supermarket, which was usually cold, so when we got to the hostel in Slovenia and there was a kitchen, I lost my mind! Hot food! So I bought some rice and kidney beans and it tasted amazing, so I thought I’d make a better version with more ingredients as a way of remembering my travels at university; and it’s really lovely, tastes very hearty and flavoursome – and super cheap as well :)
I’m back at my new house now, and unfortunately I don’t have any internet at the moment, so this is coming from my friend’s house at the moment! Hopefully I’ll be back to replying to messages and posting regularly very soon :)
50g of brown rice
Half a can of kidney beans
Half a can of sweetcorn
Half a red pepper, sliced
One jalapeno pepper, diced
One lime, zested and juiced
One teaspoon of minced garlic
Half a teaspoon of ground cumin
- Cook the brown rice in boiling water for around 20-25 minutes.
- Add the beans and sweetcorn in for 2 minutes at the end of the time.
- Drain the rice, beans and sweetcorn and add in all of the other ingredients, squeezing the lime on top and adding salt to taste.
