Summer Bircher Muesli

So… I’m attempting to get healthy again over the summer seeing as I’m not drinking nearly as much as I did whilst I was at university, and I figured breakfast would be a good place to start. I say start, I did already try to go for a run a few days ago but it’s been really unexpectedly hot in London for the past week so I nearly died and had to give up; I’ve seen people running around today in the heat and I just can’t understand. So, instead of attempting to exercise and failing miserably, I thought I’d make a healthy breakfast like muesli, seeing as I’ve wanted to make it for ages and haven’t got around to it. It was really nice, try it! It also makes you feel glowing and healthy inside, so will excuse any and all chocolate eating for the rest of the day, especially if you have green tea as well.

This recipe just made the one bowl for me this morning, but if you’re interested in making a big amount of it to have all week or to share then just drop me an email or a comment and I’ll try some measurements out for you :)

Bircher Muesli

Ingredients

One large handful of oats

4 chopped apricots

A small handful of raisins

A few almonds

One teaspoon of sunflower seeds

Lots of cinnamon

Yoghurt and fresh fruit to serve

Method

  1. Mix all of the ingredients together well, and serve with yoghurt and fresh fruit!

Serves one
