Summer Salad

I thought seeing as Summer’s on its way I would post something a little lighter and fresher than usual, that could be enjoyed on a hot day, but it’s pissing it down with rain at the moment, so now it just seems silly of me. I’m going to post it anyway, because it tasted nice, but I wish the weather would match, it’s just depressing to live in England at times!

Sorry I haven’t been posting much at all recently, I’ve had quite a hectic week because we’ve been going out a lot as exams have finished, so I’m not eating very interesting meals at the moment! I’m going home soon though, so I’m trying to make the most of Lancaster whilst I’m here. University’s such a strange way to live… I just start to feel settled and then I have to move across the country again, and it means that I’m consistently really missing people, which is weird and sad, but also fun at the same time, as it means that I go out a lot! Anyway, until Summer arrives for real, at least now you have a recipe that makes it feel like the weather’s nice outside…

Feta Salad

Feta Salad

Ingredients

50g of quinoa

Half a red onion

One handful each of raisins, pomegranate seeds and almonds

Small wedge of feta cheese, crumbled

One tablespoon of lemon juice

One tablespoon of fresh chopped coriander

Method

  1. Cook the quinoa in boiling water for 15 minutes.
  2. Mix it in with the rest of the ingredients and serve.

Serves one

    • No this isn’t vegan feta – sorry! I should have specified. Apparently Daiya do good pretend cheese…? I do indeed live inside London, but I go to university up North so I may not be around when you’re there – I can give you some touristy advice as to where to visit and stuff though? xx

      • Emily, that would be totally awesome. I am going on a few tours, Harry Potter, James Bond, Bath, Windsor Castle, Stonehenge, a music tour – Abby Road, London Eye.

        We are going to a US Football Game at Wembly.

        We are staying in the heart of London in a flat.

        My dream come true would be if we had a Simon Le Bon sighting so we may go to Putney but it’s pretty far from where we are staying.
