Banana Bread with Blueberries and Chocolate

I made banana bread today, because… Well, I don’t really have much of a reason to be honest. I got up really early (6.30am, whut?!) to revise, then by mid-day I had burnt myself out so I decided that before I start up revision again this evening I should take a break and make some snacks, and it’s actually helped a lot! With my belly full of nice food I’m actually a lot more prepared to do some more work instead of watching the Simpsons half-asleep which is what I did yesterday evening…

Good news is, not only was this the best snack in the history of the universe, but I’ll be totally finished with my second year at university on Monday, all that’ll be left is parties and my dissertation proposal, so that’s something to look forward to :)

Banana Bread

Banana Bread

Ingredients

115g of self raising flour

50g of caster sugar

2 teaspoons of cinnamon

1 and a half bananas

35g of oil (you have to weigh it instead of measuring it in a jug)

A big handful each of blueberries and chocolate chips

Method

  1. Preheat the oven to 200 degrees Celsius and grease a 1lb loaf tin. Mash the bananas until smooth, then mix in the oil and sugar.
  2. Add in the flour and cinnamon, then gently mix in the blueberries and chocolate.
  3. Bake for 40 minutes, then cut into thick slices.

Serves about 6

  1. I’ve heard of chocolate in banana bread, but never blueberries- But it makes so much sense! I don’t know why nobody has thought of it before! Your cake looks delicious, nice and moist :) good luck with school!
