So, I hope I’m not alone in this, but occasionally I have bouts of aggressively not giving a fuck about anything. It’ll only last a week or so, but every so often I’ll get bogged down in work, or I’ll have a lot on my mind, or I’ll not be sleeping too well or something and I’ll just be like “nope, don’t really care right now, life. I’ll be hiding underneath my duvet” and I’ll do just that, or close to that. Well the last week or so has been a little like that, I’ve got an exam coming up and life was just getting to me a bit (not in a bad or sad way, just in an annoyed way!) and I haven’t really been putting a load of effort into revision or writing on this blog, which has sucked… But I visited home over the weekend and coming back has given me a load of energy, so… Yeah. Long and short is that I’ve been lazy, and I’m done with being lazy now! I’m hardcore revising, I started a volunteering scheme which is so much fun, and I actually made a really nice meal today instead of just eating cheese sandwiches, so that’s a start!
This is a super easy and really cheap meal to make, and I hope you like it! It’s a really good mid-week meal because it barely takes any time and still has loads of good stuff in it, so do give it a try :)
One portion of spaghetti
Half a courgette
Half a teaspoon of chilli flakes
A squeeze of lemon juice
One tablespoon of olive oil (plus more to fry the courgette)
- Cook the pasta in boiling water for 10 minutes.
- Meanwhile, fry the cougettes (cut them into strips first) until golden brown.
- When the pasta’s cooked, mix the olive oil, chilli and lemon into it, then lay the courgette over the top.
