Sun? In Lancaster?! What is this madness?!

It’s sunny, and it has been for the last few days (I managed to sunburn my shoulders like an idiot) so I thought I’d make some Summery biscuits to go with the mood – my exams are nearly over now, so whilst it’s been nice weather me and my friends have been sitting on the grass drinking Pimms and sunbathing (or in my case, shade-bathing, because I’m unbelievably pale and freckly); yesterday me and my best friend sat for ages reading the Great Gatsby, and it was so relaxing :)

I love the smell of vanilla and violet, and it’s a really sweet sunshine smell, so I thought I’d make these today so that tomorrow I could eat them in the garden and it would make revision a little less painful! I hope you enjoy them!

Vanilla & Violet Biscuits


125g of vegan margarine

25g of icing sugar

125g of plain flour

Quarter of a teaspoon of baking powder

Half a teaspoon of vanilla extract

Icing sugar and a teaspoon of violet syrup to ice, and crystallised violet to decorate – I got both of these on the internet and they’re not that expensive.


  1. Preheat the oven to 190 degrees Celsius. Beat the margarine until smooth, then add the icing sugar and beat until pale and fluffy.
  2. Sift in the flour and baking powder, beat well and add in the vanilla.
  3. Spoon teaspoon sized balls of the mixture onto a greased and lined baking tray, then bake for 15-20 minutes until golden. Leave to cool completely before icing, then top each with a crystallised violet.
