Two chocolate posts in a row! Yeah, that and the pizza and everything pretty much sums up the last two weeks – I’ve been revising and doing essays so I haven’t exactly been eating super healthily… Oh well. I thought I’d make something really quick and easy made out of chocolate so that I could have something to look forward to when revising, so my basic plan was to do half an hour of work, and then I get a macaroon, and then go do some more work, and it goes on… But that didn’t happen. I ate like five in one sitting. They’re so good though! I got the recipe from Oh She Glows, and oh man. I might make them every week until my exams are over.
Whilst I’m talking about revision though, good news is that I’m pretty much half way finished; I’m done with my long projects, so I just have my portfolio, one exam and my dissertation proposal to do and then I’m finished for my second year of university – scary stuff. But I do have a really busy week coming up, I’m going to York for a few days, and I have my portfolio and I’m going to a Lucy Rose gig tonight, so I won’t be posting at all until next week. 30ml of vegetable oil (coconut oil’s bloody expensive)
50ml of agave syrup
Half a teaspoon of vanilla extract
6 tablespoons of cocoa powder
120g of dessicated coconut
A pinch of salt
- In a mixing bowl, mash the banana until most of the clumps are gone. Stir in the vegetable oil, agave syrup, and vanilla.
- Sift in the cocoa powder and stir until combined. Now stir in the coconut and salt.
- Line a baking tray with greaseproof paper. Using a spoon, scoop rounds onto the tray. Place in the freezer for around 20 minutes, or until macaroons are firm. Store in the freezer until ready to enjoy. They will soften at room temperature.
