Vegan Hangover Breakfast: Tofu Scramble

I thought I’d post one of my favourite breakfasts today, and it’s called a ‘hangover breakfast’, as I went out last night (to my friend’s ‘video games’ themed birthday party, I went as Misty from Pokemon), and it has so much protein, and a lot of vitamins from the vegetables, thus curing any horrid headaches from the night before! I was worried that I wouldn’t bother to cook in the morning if I was really tired, but this was such a lovely thing to wake up to, and it only took about 10 minutes to get ready as well! This would also be perfect as a post-workout snack or lunch as well, as the tofu’s so good for you, and gives you loads of energy.

Feel free to change the recipe if you make this at home, it would work just as well with tomatoes, mushrooms or any other veggies you fancy! Courgettes and peppers are just my staples, but it’s really a very versatile recipe. Turmeric is a must though, it gives it a really warm, comforting flavour that’s perfect for when you’re feeling poorly – and it gives it an awesome yellow colour as well!

By the way, in case you were wondering, the fruit salad is just apples, strawberries and blueberries drizzled in agave syrup :)

Tofu Scramble and Fruit Salad for breakfast!


Half a packet of firm silken tofu (175g)

Half an onion

One clove of garlic

Half a courgette

Half a pepper

Half a teaspoon each of cayenne pepper and turmeric


  1. Fry the onions and garlic in a little oil until golden. Add the courgettes and peppers.
  2. Cut the tofu into little cubes, then add to the pan, stirring so that it scrambles into the veggies. Add the spices and stir so the whole thing turns yellowey.
  3. Serve with a fruit salad and watch the hangover melt away!

Serves one

  2. Yum! I’ve recently discovered scrambled tofu (I do a vague sort of version of Migas using it), and it’s great – better still, my husband, who won’t eat eggs, will eat this…

  3. I only discovered scrambled tofu a few months ago.. can’t get enough of it now! So good. I like mine with mushrooms and spinach :)
