Today I decided to make a wintery casserole for me and my Mum for dinner, as it’s getting closer and closer to Christmas, and I thought it would be nice to post something savoury, as my blog’s been filled with an abundance of cookies and treats for the past week! I’ve been trawling the internet, and I thought this would be a nice winter warmer, as the lentils, hearty veggies and a hint of spiciness really makes you feel cozy when it’s freezing outside. This has got all my favourite things inside, and for some reason courgette and celery in a casserole is really comforting to me, so I thought it seemed appropriate for the Winter season!
I’ve been having a really Christmassy day today, me and my best friend watched The Holiday eating quality street and then went out and took some photos of the lovely decorations down our high street – there are some really nice ones around at the moment, so I’ll try to post some soon, for the time being I hope you like this casserole, my Mum said she loved it :)
One teaspoon of olive oil
Half an onion, finely chopped
One clove of garlic, sliced
Half a teaspoon of smoked paprika
A sprinkle of cumin
One teaspoon of dried thyme
One medium stick of celery, sliced
One red pepper, chopped
One 400g tin of chopped tomatoes
125ml of vegetable stock
One courgette, thickly sliced
125g of cooked lentils (I used Merchant Gourmet ready-to-eat Puy lentils)
- Heat the oil in a large, heavy-based pan. Add the onions and cook gently for 5 – 10 mins until softened.
- Add the garlic, spices, dried thyme, celery and peppers and cook for 5 minutes.
- Add the tomatoes, stock and courgettes and cook for 20 – 25 minutes.
- Stir in the lentils and bring back to a simmer. Serve with brown rice.
