Mixed Fruit Crumble

So the average Easter in the Chudy household is an obligatory Easter egg hunt in the morning (even though both me and my younger sister are far too old to maintain this tradition), and then we travel to my grandparents’ house for a roast dinner – usually my mum makes dessert for this, but this year she was so busy that she delegated me the responsibility; I nearly lost my mind looking through endless recipe books trying to find the perfect dessert to impress everyone with (I have a lot to live up to), and I finally whittled it down to two choices: a vegan mixed fruit crumble and Jamie Oliver’s brownies. I thought it would be good to have a choice between fruity andย chocolaty, so I’m making two desserts instead of just one; also I wanted to have something to eat myself without depriving the rest of the family of eggy and milky delights.

This first recipe is for the vegan mixed fruit crumble, it’s absolutely divine – I can’t begin to explain how amazing this smelled; it doesn’t look like much but I can’t wait to get stuck into it :)

I’ll post the brownie recipe tomorrow – they’re better fresh so mum’s making me wait to start cooking them.

Fruity crumble

Ingredientsย 

Filling

2 apples, thinly sliced

150g of blueberries or blackberries

150g of strawberries

75g of raisins

2 tablespoons of maple syrup

Half a teaspoon of vanilla extract

Crumble

35g rolled oats

75g wholemeal flour

25g caster sugar

60g vegan margarine (I used Suma sunflower spread)

1 teaspoon of cinnamon

1 teaspoon of allspice

Method

  1. Preheat oven to 190 degrees Celsius. Mix all the fruits together with the maple syrup and vanilla and spread them evenly in a small oven-proofย dish
  2. Place the oats and flour in a bowl and mix well, then add the margarine into the mix and crumble together with your fingertips until the mixture looks like breadcrumbs
  3. Add the sugar and spice and mix through
  4. Cover the fruit with the crumble mixture. Bake for 20 minutes until the crumble is golden

Serves about six

230 calories per serving
