Dad’s Fajitas

Went to my dad’s new flat today for dinner and he made me fajitas :)

He’s just turned veggie so he wanted to experiment a little on me, and they were lovely – not at all like any fajitas I’ve had before, and it was nice to have someone cook for me for once; I’ve been doing all my own cooking every day for the last few months at uni and it’s nice to just sit and eat with no hassle.

Vegan fajitas

Ingredients 

1 tablespoon of  olive oil

1 red, 1 yellow and 1 green pepper

1 carrot

3 spring onion

1 garlic clove

One tablespoon of Cajun seasoning (cayenne pepper, cumin, etc.)

6 tablespoons of fresh tomato salsa

4 tortillas

Method

  1. Heat the oil in a large frying pan. Add the peppers and carrots, and fry for 5-6 minutes until softened. Add the spring onions, garlic and Cajun seasoning and cook, stirring continuously, for 1 minute adding a little water if necessary to prevent the mixture sticking.
  2. Spoon a little of the tomato salsa into the middle of each tortilla. Top with a quarter of the vegetables and then fold the tortilla over loosely. You can serve with salad if you want (I did but didn’t really eat mine because I don’t like rocket)
Makes enough for 4 fajitas
About 228 calories per serving – depends on your brand of tortilla (we used Discovery ones)
