Sweet Pepper and Tomato Soup

The weather’s so lovely today that all I felt like eating was a light soup – something about hot weather makes me squirm at the thought of a giant meal, or the usual carb-overload that inevitably occurs at dinner. This soup is really easy, and doesn’t involve a blender, so it’s suitable for badly equipped uni halls like mine :)

Apologies to Mr. Heinz for loving homemade soup so much; this is the first time I’ve tried making my own and I really loved the freedom of adding whatever I liked and knowing it would be vegan and to my taste – most canned soups use an unholy amount of cream, so I’ve lost my liking for them – hope you like this recipe though, I had a lot of fun and it turned out well considering I’m a soup-making virgin :p

The smellsΒ emittingΒ from my kitchen were incredible as well, whilst the peppers and onions were frying I sat by the saucepan with a stupid smile on my face, just inhaling…

Pepper & tomato soup

Ingredients

Half a tablespoon of olive oil

One tablespoon of water

One red pepper

One garlic clove

Half an onion

200g chopped tomatoes

One pint of vegetable stock

Salt, pepper and fresh basil

Method

  1. Put the oil, water, pepper, garlic and onion in a saucepan, heat gently and cook for 5-10 minutes. Cover the pan and simmer for 10 more minutes (this is the part where it smells amazing)
  2. Add the tomatoes, stock and seasoning and simmer uncovered for 15 more minutes
  3. Sprinkle the basil on top and serve

Serves two – or just eat half and then freeze the rest for another time, which is what I did
