Another meal from my birthday party! This one is Greek style pasta salad with feta and fresh vegetables – it’s not vegan, sorry, but all of my friends eat dairy so I thought I’d add feta cheese for a different flavour – maybe you could add kidney beans to make it vegan, but the flavour and style would change quite a lot; it’s always good served with lovely crusty white bread though :)
It tasted really lovely and my friends liked it – we were picking at it at the end of the party like it was popcorn! I made it again after I gave blood this evening so I could restore my energy, it definitely made me feel more steady – there’s always that lovely feeling of energy flooding your body when you eat something carby and filling :)
Ingredients
300g of fusilli pasta
200g of halved cherry tomatoes
100g of green olives
200g of spinach
200g of cubed feta cheese
4 teaspoons of olive oil
Black pepper
Method
- Cook the pasta for 10 minutes, then add the spinach and cook for a further two minutes.
- Drain and mix in the other ingredients, then drizzle the oil over the top along with lashings of black pepper. Serve with crusty white bread.
Serves around six

We do one like this also with black olives and diced orange, red and green peppers! It is always a hit – so yummy and something of a cold, comfort food…
