I thought that today I’d break the routine and cook my breakfast; I usually eat cereal or toast for, but I’ve been intrigued by the idea of breakfast quinoa ever since someone suggested it to me ages ago, so I thought today I’d finally give it a go, and it was really lovely! I thought the concept was pretty simple and I could pretty much add any flavour I wanted – I really love the combination of cherry and almond, so I thought that was anĀ absoluteĀ must. Good news is that quinoa’s really good for you as well, so it’s perfect for running mornings to give you a little kick of protein :)
This was also really nice given the weather we’ve been having lately in London; it’s ridiculously hot at the moment, and this wasn’t as overpowering as porridge can be in Summer, and was actually quite refreshing in a strange way. It would also be good for busy people if you cooked the quinoa overnight then kept it in the fridge.
Ingredients
Half a cup of quinoa
One cup of water (not American cups, just a little cup to get the proportions right)
A splash of almond milk
A few cherries and toasted almonds
Method
- Put the quinoa and water in a saucepan and bring to the boil, then simmer, covered, for 15-20 minutes.
- Put in a bowl with a little almond milk and decorate with toasted flaked almonds and cherries – it’s that simple!
Serves one
